Beginning in 1997 with traditional family recipes, the Colaneri family have pursued a simple philosophy: to make unique high quality pastas following artisan principals and based on the culinary traditions learned from their Italian ancestors.
Healesville may be known for it's famous animal sanctuary, but this pretty town lined with trees in the heart of the wine district is home to one of the pioneering 'foodie' families of the region, the Colaneri Family of Yarra Valley Pasta.
Much attention is given to all the ingredients that go into Yarra Valley Pasta, working closely with their suppliers to source the best quality. Certified free-range eggs and high quality GM -free durum wheat semolina, sourced directly from a farm in northern NSW, form the basis of all the pasta range; the filled ravioli change seasonally and is made using ricotta cheese from 100% dairy farm milk from the nearby towns of Gruyure and Coldstream.
the company sells a selection of filled and fresh- cut pastas as well as hand cut & rolled gnocchi, lasagne and a variety of house made products. Popular filled pastas include ravioli with local grass fed beef; roasted pumpkin with sweet savoiardi biscuit & thyme; gorgonzola, prosciutto & dried fig; cannelloni stuffed with ricotta & spinach. Contemporary flavours include caramelised onion, goat's cheese & almond; Australian prawn, macadamia nut & chilli.
For fresh cut pasta, several varieties of angel hair, linguine, spaghetti, pappardelle and fettucine are made with flavours of cracked pepper, lemon & parsley, chilli and also organic spelt. The most sought after product is the most simple and highly awarded - Free - Range Egg Spaghettini which won gold and overall Champion in the 100% Durum Wheat Fresh Pasta category at the 2011 Royal Sydney Show.
Pasta is made on a weekly basis. To ensure freshness, the pasta is packaged using advanced refrigeration technology while filled pastas arte snap frozen to capture the true flavours and freshness of the product without having to add any preservatives or colourings to enhance or extend shelf life.
Yarra Valley Pasta is available through selected local and Melbourne based providores and features on restaurant menus in the region and throughout Melbourne.
